New brewery coming to Bathurst

Two Heads Brewing

Bathurst in New South Wales’ central west will have its first new brewery in a many years with the establishment of Two Heads Brewing late in 2015.

Located in the heritage Crago Mill, Two Heads is the tree change venture of two Heds: Lawyer Campbell Hedley and brother Greg, a quantity surveyor, both of whom are avid homebrewers.

Bruce Peachey, former head brewer at Bluetongue Brewery and now Sydney-based brewing consultant, is assisting them with the project.

“He is working closely with us on brewery design, sourcing and brewing operations/recipe development,” Campbell Hedley told Australian Brews News.

Hedley said that initially the venue will operate chiefly as a brewpub, though it will have capacity to do offsite keg sales as well.

“I don’t feel the need to get into the Sydney market, I’d much rather get into the greater west. I’d love Two Heads to be the beer that reach for when you want something different in Parkes or Forbes or Dubbo or wherever,” he said.

Hedley said that first and foremost, Two Heads will aim to create beers that are as approachable as possible.

“We have to make sure it’s something that Bathurst wants to drink,” he said.

“We’ll do some seasonals alongside that as well. We’re also keen to have a rotating guest tap. There’s a bunch of breweries popping up out that way, a lot of them don’t have a venue to sell their beers in, so we’re pretty keen to provide that community support for the local brewers.”

Hedley said Two Heads is expecting its DME brewing kit to arrive in November, ahead of a likely launch in January 2016.

    Great news and a super place to set up. These guys are authentic know what there doing and will kill it in the region. Fantastic for the Bathhurst scene.
