Beer Masons Asiago Crab Cakes with Lost Abbey Gift of the Magi

This recipe is designed to pair with Lost Abbey Gift of the Magi, a stronger Biere de Garde. It comes with the Beer Masons Summer Pack.

Asiago Crab Cakes

Asiago Crab Cakes and seafood platter with Lost Abbey Gift of the Magi

Serves 4 (or 2 hungry) people.

Prep your cold ingredients for this platter first and store in the fridge until you are ready to serve.

Get two or three pans going for your crab cakes, salmon and whiting. Plate up and serve. You can easily increase the quantities to serve more, but this is a great platter for two to get the party started!

The cheese in these crab cakes makes for a heavenly combination with the Lost Abbey Gift of the Magi. If you can’t lay your hands on it, you can replace with a quality parmesan.

Ingredients

  • 250g freshly picked crab meat (muddie if you can get it!)
  • 100g Asiago or Parmesan cheese, grated
  • Small Garlic clove crushed
  • 1/2 tsp ground fennel
  • 1/2 cup bread crumbs (home made is better)
  • 1/2 lemon juiced
  • 1 tbsp chopped parsley
  • 1 tbsp plain flour
  • 2 egg yolks, beaten
  • Pinch of salt and pinch of white pepper
  • Olive oil

Method

Combine all of the ingredients, using your fingers to work it well together. Form into small cakes and store covered in the fridge for half an hour to firm a little. In a small non-stick pan, heat a bit of olive oil and gently fry a few of the cakes at a time. Drain on absorbent paper and keep warm until ready to serve.

Seared Salmon

  • 150g lightly smoked salmon fillet (without the smoke will also work)
  • Olive oil
  • Sea salt

Cut the salmon into bite size pieces, being careful to keep the skin intact. In a small non stick pan, sear the skin side down for 30-40 seconds until it colours. Flip the salmon and quickly sear all of the other sides. Remove and prepare to serve and season with a little salt and a drizzle of quality olive oil.

Sand whiting fillets

  • 6 small sand whiting fillets with tails
  • Butter
  • Sea salt
  • White pepper

Melt summer butter over a grill pan. Sear the fillets quickly on both sides. Remove and serve immediately on the platter.

You will also want:

  • 6-10 tiger prawns
  • Lemons
  • Green salad
  • 6-12 freshly shucked oysters
  • Aioli
