Glebe finally gets its brewpub

staveslogoSydney brewer Steve Drissell is finally set to open the doors to his Glebe brewpub.

The venture formerly known as Iron Awe Brewbar is slated to open in a new guise, Staves Brewery, on October 23.

Building code compliance issues have stalled the project since it received liquor licensing approval almost three years ago, Drissell told Australian Brews News.

The downstairs area and beer garden will open first, with works still to continue on the upstairs kitchen, which will serve pizza once complete.

As well as bearing a close resemblance to his given name, ‘Staves’ embodies Drissell’s love for traditional ales (barrel staves) and music, with live acts to feature at the venue.

The venue will operate purely as a freehouse in the first instance, with production of its own beers expected to begin early in 2016.

Beers from Little Brewing Co as well as local outfits Batch and Wayward are first off the mark.

“I’ve got the brewhouse in here, the fermenters I’m still trying to sort out with a supplier,” said Drissell.

“I’m launching with other breweries’ beers, but that’s always going to be part of the model – the public will decide what they want to drink.”
