Danish Brewing Innovator Mikkeller lands in Queensland
Saccharomyces Beer Café has teamed up with Mikkeller HQ to recreate a Mikkeller Bar in Brisbane. Over three days Saccharomyces Beer Café will feature 40 different Mikkeller tap beers and spirits alongside two beer dinners.
In 2006 Mikkel Borg Bjergsø was a math and physics teacher that started experimenting with hops, malt and yeast back home in his kitchen in Copenhagen.
Today he exports his micro-brewed beer to 40 different countries and is internationally acclaimed as one of the most innovative and cutting-edge brewers in the world.
Beginning as a gypsy brewery, Mikkeller has grown into a global phenomenon with over 40 bars, restaurants and bottle shops throughout Europe, America and Asia.
Mikkeller creates beer that challenges the concept of what good beer is. Using the best ingredients and collaborating with creative minds throughout the world, the brews push the boundaries and dissect existing beer genres.
Not only have the brews been pushing the concept of what beer is, Mikkeller has being incredibly prolific with over 800 different beers produced since the brewery’s inception. This fearless experimental mindset has produced incredibly unique beers such as blueberry coffee stouts, and a series of spontaneously fermented beers spiked with fresh fruits.
During Brewsvegas, Saccharomyces Beer Café (SBC) hosts this game changing unique brewery. Offering two curated dinners and a weekend of over 50 different Mikkeller beers.
On Monday March 18, SBC becomes Mikkeller’s acclaimed collaborative Copenhagen brewpub, WARPIGS. The original ‘heavy metal’ American brewery, 3 Floyds collaborated with Mikkeller to create an authentic Texas barbeque joint with American-Danish style brews to complement. A seemingly contradictory collaboration, WARPIGS Brewpub has grown into an international gastronomical hotspot. SBC has airfreighted in 10 unique WARPIGS brews and for one night are offering a WARPIGS inspired barbeque feast. The feast includes a mountain of smoked meats and classic sides.
Smørrebrød is a culinary Danish tradition some 150 years of open-faced sandwich on rye bread. Øl & Brød is Mikkeller’s take on this Scandinavian tradition transforming the common workers lunch away from home into a niche fine dining phenomenon. On Tuesday March 19, SBC is hosting a curated Øl & Brød inspired three course dining experience. Ten Mikkeller beers have been airfreighted to complement the food.
For the weekend from Friday March 22, Saccharomyces Beer Café (SBC) will convert itself into a the first official Australian Mikkeller venue. In close collaboration with Mikkeller HQ SBC have worked to recreate the design, aesthetic and values of the Copenhagen behemoth, featuring more than 40 different beers over three days.
But It is not only the beer!
SBC head chef, Thomas Emblard, has studied the menus and techniques of Mikkeller’s Copenhagen venues WARPIGS and Øl & Brød to produce a menu inspired by the game-changing establishments. Albeit with a slight Australian twist.
