Our 2017 pairing dinner will feature a lavish four course meal, curated by the talented Dai Duong of Uncle Restaurants working with select award-winning, nationally recognised brewers and their best beers on show.
Dai Duong – Uncle
Dai’s passion for travel has led him to many locations around the world including Mexico, USA, Eastern Europe, Egypt, Morocco, Japan, South East Asia and back to his homeland of Vietnam. His main focus of travel is to learn about new cultures and explore the local cuisine to give renewed inspiration for menu ideas when returning to work.
Dai has worked as head chef at the one hat restaurant Dandelion, one hat Veludo, fine dining at Punch Lane, St. Kilda’s bustling Pelican and is current co-owner and head chef at Uncle Restaurants in St. Kilda and Melbourne’s CBD.
