The global corona crisis has driven a significant change in the brewing industry as the consumption of beer in bars, events and restaurants plummeted and consumers shifted to buying beer to consume at home. This change is forcing brewers to refocus on the importance of package product shelf life.
Producing a beer that has a long shelf life, during which it maintains all the qualities that were carefully adjusted in the process of production is now more critical than ever. And for modern brewers it is imperative to achieve these production and quality outcomes in a sustainable and economical manner.
When it comes to sustainability, it’s three dimensions need to be balanced: sustainable production must be ecologically friendly, economically successful, and ethically unobjectionable. The reduction of waste and consumption has been in the centre of the efforts to become more sustainable for the past years, a more recent focus is on reducing the emission of microparticles.
Beer stability has several dimensions as well, the most important being flavour stability, colloidal and microbiological stability.
After briefly discussing the major influences on the above, Dr Pahl will introduce Pall’s technology systems for filtration and clarification, stabilization and eliminating of microbiological risk and discuss how these systems can improve both sustainability of production and shelf life of the beer.
Bio Dr. Roland Pahl:
Roland Pahl started in the brewing industry with an apprenticeship as brewer and maltster in the early 1990s and later worked as a brewer at Schultheiss Brewery Berlin. After achieving a degree as a certified brewing engineer Roland went on to complete a PhD as a Dr.-Ing. in brewing technology. He spent around 20 years working with VLB Berlin, a scientific institute in Germany that focusses on research, education, and service for the brewing industry. When he left VLB he was the head of VLB’s Research Institute for Beer and Beverage Production and COO. Roland joined Pall in February 2021 as a Beer Market Manager.
