Big Truffle in Little Porter 9.2%
Salted Truffle Imperial Porter. We’ve used truffles before in a big dark beer. The earthiness of truffles tends to compliment the large roasty flavours of the strong dark beer. The salt is just to give it a bit of sharpness at the end, similar to baking.
Paired with Cacio e pepe
As Anthony Bourdain (RIP) once said this pasta “could be the greatest thing in the history of the world”. We don’t claim ours is, but we think it will work a treat with the salt and truffle flavours of the beer. Casio e Pepe is a simple Roman pasta of spaghetti, Romano cheese and black pepper.
Cake Hole 6.5%
Black forest cake stout. Think big rich cherries & chocolate, very smooth but drinkable with Chilli watermelon sorbet with pepita and melon seed
crumb to offset the rich stone fruit and chocolate flavours we have gone with a refreshing watermelon sorbet, with a hint of chilli to tie it to the chocolate in the beer.
Black Lung VIII 9-10% (still in barrels)
Peated Imperial Stout aged in cognac barrels. Smokey and rich with a sweetness from the cognac with a Duo of confit duck breast and crispy duck leg with liquorish and carrot puree, heirloom carrots and duck date jus. Duck and cognac is a match made in heaven, so with some extra sweetness from the date jus, this should really hit the spot.
Cherry Pie a la Mode 8-9%
Cherry Pie Amber Ale. Rich and sticky amber with strong notes of cherry. Has a bready vanilla characteristic as well with cigar smoked cognac
cannoli. Not much needs to be said, cherry pie and cannoli.
