For Sean Kanhai, studying brewing while working in the industry has not only accelerated his career but also helped transform the brewery where he works.

“It’s exciting when you’re learning new things. You have so much energy and knowledge and just want to put it to use. My studies even inspired my bosses by getting them to think about beer in a different way, and we’ve gone on to launch new products”, he said.

Sean, 37, admits that he didn’t know much about beer until he moved from Canada to Australia.

“I have a background in chemistry and food science, and I’d been working as a cook while thinking about a career change. Then I set foot in True Brew, a craft brewery in Bendigo.”

“I started work there as a brew hand, helping the brewer, doing bottling and kegging. I even worked behind the bar. I wanted to learn more though, and then I found out about the brewing course that was available at TAFE.” (Certificate III in Food Processing (Brewing) – FBP30121).

“As I was already working at True Brew, I could combine full-time work with study two nights a week. Learning while at work suited my lifestyle and suited my employer. Taking the course had a definite impact on the way I worked by letting me apply things I’d learned directly in my job.”

Sean’s enthusiasm for learning was fostered by his teachers, who boasted many years of industry experience as professional brewers.

“My teachers went beyond my expectations. You could ask them anything and they’d give you an in-depth answer. Brewing is both an art and a science and I loved being able to talk with such experienced brewers. Their expertise meant I got to learn the techniques and the underpinnings of the whole process.”

“I’d video my study assignments on my phone and send them in, and my teachers would visit me regularly on-site at the brewery.”

The positive effects of Sean’s new skills have also flowed through to his employer.

“My studying brewing at TAFE helped True Brew’s owners make the decision to upgrade our equipment. Bringing new skills into the workplace was a key factor in that. I’ve also stepped up to become assistant brewer, working alongside the owners.”

“I love the idea of working in a craft brewery where you get to experiment. We’ve made a few beers that we’re really happy with like Bendigo Crisp – a perfect summer day lager – and The Hop Hero, a NEIPA/hazy blend. It’s fun to do something different that people enjoy.”
